1 tea bag KIKOKO SYMPA-TEA
1 sprig fresh thyme
1 sprig fresh lavender
1 sprig fresh mint
5 kumquats, quartered
1 teaspoon honey
1 tablespoon Happy Girl Kitchen Co pickled beet juice
Fresh-cut California poppy and fresh herb sprigs to garnish
Combine water, fresh herbs, kumquats and honey in a saucepan and bring to a steady simmer.
Remove from heat, pour into glass with Sympa-Tea tea bag and steep 5 minutes.
Remove tea bag and chill in the fridge.
Pour over tall glass full of ice, drizzle the beet juice on top.
Garnish with a California poppy (yes, it’s edible and it’s legal as long as you don’t pluck it from state property.)
